I have been spending the past couple of weeks in the gym pretty hardcore. I’m sure my personal trainer may not agree about how hardcore, but it has been the most i’ve worked out since High School days.
Needless to say, I’m trying to not sabotage that work in the gym with my diet. I was, however, invited to a dessert birthday party and wanted to find something everyone would like, that my trainer might approve of. I decided to take a post workout treat of banana and peanut butter and add a little flair by dipping it in chocolate!
Ingredients:
- ripe bananas
- peanut butter
- semi-sweet or dark chocolate
- parchment paper
optional:
- peanuts to put on top
- butter, crisco, or coconut oil to make chocolate melt thinner
Directions:
- Cut bananas into slices. Remember, these will be double stacked, so cut about 1/2″ so when two are stacked they aren’t wider than your mouth!
- Line banking sheet with parchment paper with half of the banana slices.
- Put a dollop of peanut butter on top of the bananas, and cover with other half of bananas.
- Put tray in freezer for at least 15 minutes.
- While bananas are freezing, melt the chocolate. I personally added butter (about 2-3 tablespoons for about 6 oz of chocolate) to help make the chocolate thinner for dipping. Put the butter and chocolate in the microwave and heat for 30 seconds at a time, stirring in between, until the butter and chocolate are melted.
- Remove bananas from freezer and dip in chocolate. I like to use a fork to get them out of the chocolate bowl, and place back on parchment.
- Return to freezer for a few minutes, or keep there until ready to serve!
I decided to add some peanuts to the top of some of the desserts for an extra touch!
